Spicy Cauliflower Egg White Muffins

I have been staring at a head of cauliflower in my refrigerator for the last week wondering what I was going to make. It became a necessity when I was slapped with a pungent smell after opening the fridge door last night. I love cauliflower, but could do without the smell! 

I decided to put a twist on my Saffron Cauliflower Protein Muffins (recipe in previous posts).  Something spicy! 

Ingredients: 
3/4 cauliflower head grated 
1 cup egg whites
1/2tbsp cayenne pepper
1/4 tbsp turmeric 
1/4 tbsp Mrs Dash Tomato Basil
1/2-3/4cup grated cheese of choice
Black pepper to taste

Preheat oven to 350°

Mix all ingredients together and fill cupcake tin 3/4 full. I made the mistake of filling to the top. They still turned out, but not as uniformed. 

Bake at 350° for 25 minutes. Cool and enjoy. Makes 8 "muffins."

Cauliflower Muffins

Oh, my poor abondoned blog. What ever shall I do with you? You have been left in the shadows of Instagram. I will try my best to make it up to you! I have recently posted my cauliflower muffins, and was going to give the recipe here, but @meganonajourney squeezed it out of me before I could dust you off! For those that do still follow, here it is!

Cook cauliflower in microwave for approx 10 minutes and let cool. (You can also steam if you choose not to use a microwave)

Grate cauliflower in large bowl. 

In small bowl add 4tbsp Greek yogurt, 1/2c egg whites, italian seasoning or Mrs Dash garlic herb, and 1/8tsp saffron. Mix well and add to grated cauliflower. 

In greased cupcake pan, fill each about 1/2-3/4 full. Should make 12 "muffins."

Bake at 375 for 15 minutes. 

Grate 28g (or 1" cube) of Skinny Brit cheddar cheese (or another low fat cheese) and spread evenly over all 12 "muffins." Bake and additional 2-5 minutes on broil.  Cool completely before removing. Vóila!

Cauliflower Salad


I recently came across a gluten free recipe for tabbouleh that replaced the couscous with cauliflower. I really wanted to attempt this dish, but didn't have any of the proper ingredients left from my recent trip to the farm, so I decided to make the dish with what I had left in the refrigerator. What I came up with was a fresh, crisp summer salad. A great alternative to rice, pasta or couscous. Here's what I added;

1⃣ Cauliflower head, grated
2⃣ Cucumber, diced with skin on
3⃣ Jalepeño, diced
4⃣ Red onion, diced
5⃣ 2 limes, juiced
6⃣ Black pepper 
7⃣ Garlic salt (or your seasoning of choice 




I mixed all the ingredients in a bowl and let it marinate in the fridge for a couple hours before serving with our dinner. 


Half a grilled chicken breast, SooFoo, cauliflower salad and half an avocado. All in a days macros!
